1 skinless, boneless chicken breast half

Directions for Southwestern Egg Rolls


Step 1

Shred the chicken and mix in the pan with the green onions and black pepper. Mix in the black beans, corn, spinach, pepper, jalapeño, parsley, chili powder, cumin, salt, and cayenne pepper. Cook for 5 minutes and stir until well mixed and smooth. Remove from heat and stir in Monterey Jack cheese to melt.

Step 4

Wrap the tortillas in a clean, slightly damp cloth. Microwave on high until hot and pliable, about 1 minute.
