Ingredients for Turkey Burger
- 2 pounds white meat ground turkey
- 2 pounds dark meat ground turkey
- 1 Poblano pepper
- Pinch of freshly ground black pepper
- 10 brioche or gluten-free buns, sliced in half
- Pinch of kosher salt
- 10 slices of beefsteak tomatoes
- 10 slices of red onion
- 1 teaspoon of olive oil
- 2/3 jalapeno, seeded and minced
- Butter lettuce leaves, for serving
- Suggested toppings: mustard, mayonnaise, and ketchup

Steps 1Grill the poblano with tongs on the stove until the skin is blackened. Place in a paper or plastic bag and set aside for 10 minutes to cool.

Remove the seeds and skin from the poblano under running water, then dice.
Steps 3Add the light and dark meat ground turkey to a bowl. Add jalapeno, poblano, pepper, and salt. Drizzle in olive oil and mix together. Shape the mixture into 10 to 12 patties.
Steps 4Heat a grill pan or grill to medium-high and cook the burgers until golden on the outside, about 5 minutes per side. Toast the buns on the grill until golden brown, a few minutes.
Serve the burgers in the buns with sliced red onion, tomato, lettuce, mayonnaise, mustard, and ketchup.
