Ingredients for tagliatelle pasta
- 3 cups of all-purpose flour (444 grams)
- 3 large eggs, plus 1 egg yolk, room temperature
- 1 teaspoon salt
- 1 tablespoon olive oil
- 2 teaspoons water

Put the flour in a large bowl, make a well in the center, and add the eggs, olive oil, water, and salt. Using a fork, beat the eggs and start adding the flour from the inner edge of the dough.
The dough will start to come together, and when there is no more liquid, start kneading the dough with your hands. until the dough comes together and is not too sticky to handle.
If the dough is still too sticky, add a little more flour and keep kneading for 10 minutes. Kneading makes the dough nice and light.
When the dough becomes soft and smooth, wrap it well in plastic wrap so that no part of the dough dries out. Set aside 30 minutes to rest.

After resting the dough, cut it into four parts. Take a quarter, and wrap the rest back in plastic wrap. Shape the dough into a rectangle with your hands and put the dough through the pasta machine on the highest setting. Repeat two times on the highest setting.
Turn the machine to the Next setting and continue kneading the dough. Keep passing the dough, decreasing the setting each time until you reach the final setting.
Attach the tagliatelle attachment to the machine and run the dough through it one last time. Roll up the tagliatelle on your hand and transfer it to a baking sheet, or if you have a pasta hanger, you can use it. Allow it to dry for 30 minutes.

Take a small amount of dough and roll it into a rectangle as thin as possible using a rolling pin.
Using a knife, cut the noodles. The thickness and width are up to you.
