Grilled Tomato Ketchup Recipe

Ingredients for Grilled Tomato Ketchup Recipe:-
3 pounds Roma tomatoes, cored and halved
1/4 cup sugar
1/2 cup malt vinegar
2 teaspoons aji amarillo paste, chipotle in adobo or other spicy pepper sauce, such as Pickapeppa
4 teaspoons kosher salt
1 teaspoon ground allspice
1 cinnamon stick
1 small bay leaf
Directions of Grilled Tomato Ketchup:-
1. Heat a grill or grill pan to medium heat.
2. Grill the tomatoes skin-side down about 5 minutes, grill lines appear, then flip and cook until nicely charred and sagging, about 8 more minutes. Remove, chop into pieces, and transfer to a medium saute pan on medium heat. Stir in the sugar, vinegar, salt, allspice, aji amarillo paste, cinnamon stick, and bay leaf and cook the tomatoes no longer hold their shape until the mixture looks very dry cook for about 20 minutes.
3. Discard the bay leaf and cinnamon stick, and then blend the mixture to a smooth, thick sauce about the consistency of store-bought ketchup. Blend until desired consistency is reached.
