Ingredients for Chicken Noodle Soup

- 1/2 pound boneless skinless chicken breast

- 4 cups of chicken broth

 - 2 carrots

- 1 celery stalk

- 1 small onion

- 1 cup of uncooked elbow noodles

 - 1 tablespoon olive oil

 - 1 teaspoon of salt

- 1/2 teaspoon black pepper

 Directions for Chicken Soup Recipe

In a large pot over medium heat add the olive oil. Once hot add the onions and saute until translucent. Add the carrots and celery and continue to cook for 5 minutes. Add the chicken breasts and season with salt and pepper. Cook for 10 minutes then remove the chicken breasts and set aside. Pour the chicken broth into the pan and bring it to a boil. Reduce the heat to a simmer and return the chicken breasts back to the pan. Cover and let simmer for 20 minutes. Remove the cover and allow the chicken to poach for another 15 minutes. Remove the chicken breasts and slice them into bite-sized pieces. Return the chicken to the pot along with the cooked noodles. Simmer for 5 minutes and serve.
