Ingredients for Creamy Chicken Recipe

  • 4 boneless skinless chicken breasts.
  • 1 tbsp. extra-virgin olive oil.
  • Kosher salt
  • 1 tsp. dried oregano
  • freshly ground black pepper.
  • 1 1/2 cup cherry tomatoes, halved
  • 3 tbsp. butter
  • 3 cloves of garlic, minced
  • 1/2 cup. heavy cream
  • 1/4 cup. freshly grated Parmesan
  • 3 cup. baby spinach
  • Lemon wedges, for serving

Directions for Tuscan Creamy Chicken Recipe

Step 1

Heat oil in a skillet on medium heat. Add the chicken and season with pepper, salt, and oregano, and cook well for about 8 minutes. When pink to golden, remove from the skillet and set aside.

Step 2

In the same skillet, 3 tbsp, melt the butter over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the 1 1/2 cup cherry tomatoes and season with salt and pepper. Cook till the tomatoes start to splutter, then add the spinach and cook till the spinach wilts.

Step 3

Stir in the Parmesan and heavy cream and bring the mixture to a simmer. Reduce heat to low and simmer for 4 minutes, or until sauce is slightly reduced. Return the chicken to the skillet and cook until heated through 6 to 8 minutes.

Step 4

Serve with lemon wedges.
