*. 3 pounds Roma tomatoes, cored and halved
*. 1/4 cup sugar
*. 1/2 cup malt vinegar
*. 4 teaspoons kosher salt
*. 1 teaspoon ground allspice
*. 2 teaspoons aji Amarillo paste, chipotle in adobo or other spicy pepper sauce, such as Pickapeppa
*. 1 cinnamon stick
*. 1 small bay leaf
Burgers:
*.1 medium onion, cut into 1/2-inch rounds, rings separated
*.2 tablespoons vegetable oil
*.1 yellow bell pepper, cored, seeded, cut into 1/2-inch strips
Kosher salt
*.Freshly ground black pepper
*.1 1/2 pounds of ground beef
*.4 hamburger buns
Directions:-
For the ketchup:
Heat a grill pan or grill over medium heat and grill the tomatoes for about 5 minutes until deep grill lines appear on them, and then flip and grill the other side as well, grilling the tomatoes for about 10 minutes so that Soften well. Now remove from curls and cut into pieces, transfer to a saute pan and cook over medium heat. Stir in sugar, vinegar, aji Amarillo paste, salt, allspice, bay leaf and cinnamon stick and cook, stirring occasionally. Cook, going, for about 25 minutes، until the tomatoes don't hold their shape and the mixture looks too dry, discard the cinnamon stick and bay leaf, and then blend the mixture one tablespoon at a time if the ketchup is too thick. Add spoonfuls of water to get the consistency of store-bought ketchup.
For the burger:
Heat 1 tablespoon of oil in a grill pan and grill the onion, sprinkle with black pepper, and 1/2 teaspoon salt. Grill the onion until nicely softened, turning once, about 6 minutes. May seem. Now remove the onion and keep it aside. And clean the grill to cook the burgers.
Divide the ground beef into four 6-ounce patties, 4 inches wide and 1 inch thick. Brush the burgers with oil and sprinkle both sides with pepper and salt. Grill the burgers for about 4 minutes, until visibly more than halfway done on the bottom, then flip and grill 4 minutes more for medium-rare. Transfer to a cutting board or plate to rest for 5 minutes.
